Since all the present day Collinses died at the end of "House", the most logical decision would have been to go back in time, to adapt the 1795 storyline, retelling Barnabas' origin. The movie title's "curse" would have been Angelique's curse. Not that Dan Curtis' decisions were always governed by logic...
It would have to be during a period when they weren't using the set, probably some time between the death of Matthew Morgan and the arrival of Barnabas.

Because the writers were making it up as they went along and weren't always thinking things through carefully. At some point you just have to give in and embrace the absurdity, and realize that the answer to every question is: Because it's Dark Shadows.
Or if that doesn't work for you, write a fan fiction that offers an explanation, or an alternative version of the story that actually makes sense.
